We are using the 100% Not Chicken @100percent_not by Simplot Foodservice and also added some Wood Vegan Mayonnaise by @edlyn_foods Ingredients - Serves 10 Dressing: 200g Edlyn Vegan Mayonnaise Salad: 750g 100% NOT Chicken 10g paprika 10g ground cumin 3g chilli flakes 75ml olive oil 750g baby cos lettuce, shredded 400g Lebanese cucumber, halved lengthways, de-seeded and thinly sliced 700g cherry tomatoes, cut in half 200g red onion, soaked in vinegar and sugar, then drained for quick pickle 175g pitted green olives 200g pine nuts, toasted 20g fresh mint, finely chopped Method 1. Ingredients 1 litre Water 140gm Chefmaster Polenta 150gm KNORR Instant Mashed Potato Mix 100gm Corn kernels 50gm Holy Cow Tasty cheese 4 Eggs, lightly beaten Method 1. Bring the water to the boil and add the polenta. Cook over low heat, whisking until smooth and thickened. 2. Add the KNORR Instant Mashed Potato Mix and whisk until a smooth mash consistency. 3. Ingredients 2 Tip Top Potato Bun, buttered inside 8 pieces of Bertocchi Bacon 4 slice Anchor Burger Slices 6 Battered A&T onion rings 50ml Masterfoods Bourbon BBQ sauce to serve 50ml Chris' Dips Tzatziki Sauce 2 Chefs Choice Burger Patties 6 Sandhurst Dill pickles 8 baby capers, finely diced 2 sprigs fresh dill ¼ cup pickled carrot, julienned 2 sprigs flatleaf parsley, stems removed 1 iceberg leaf, washed & shredded 2 slices tomato Method 1. Preheat grill to high heat. On a lined oven tray top burger patties with cheese burger slices and grill until cheese has melted. 2. Preheat fryer to 170C then fry onion rings until golden, remove, season and set aside 3. Heat non-stick frying pan to medium heat, pan grill burger bun until toasted. 4. It's #NationalAvocadoDay! 🥑🥑 Try this Loaded Vegan Nachos Recipe from Mission Foods AU using Kraft Heinz Company, Bega Cheese & Sandhurst Fine Foods products. Ingredients 1 Bag Mission Foods Rounds Tortilla Chips 1 Tub Kraft Heinz Company Avocado Chunky 85gm Bega Cheese Vegan cheddar cheese 2 Tbsp Sandhurst Fine Foods Olive oil 425gm Black beans, drained and rinsed 1 Red bell pepper, sliced 1 Red onion, sliced 140gm Baby portobello mushrooms, sliced 1 Tbsp Fajita seasoning ½ Cup Vegan sour cream 1 Lime 2 Tbsp Cilantro ½ Jalapeño (optional) Method 1. Preheat grill to medium-high heat. 2. Preheat oven to 375 degrees (F). 3. Lay a sheet of aluminium foil out on a cutting board, and spread out the bell pepper slices, mushroom slices, and 2/3 of the onion slices in a single layer. 4. Toss veggies in olive oil and fajita seasoning, coating evenly. Grill veggies over medium-high heat (on the aluminium foil sheet) for 10-12 minutes, or until just softened and starting to brown. Remove from heat. 5. In a large baking dish, spread chips in an even layer. Sprinkle half the cheese on top of the chips. 6. Spread a layer of black beans on top of the cheese. Then, spread the grilled veggies evenly on top. Sprinkle remaining cheese on top of the nachos. 7. Bake in the oven for 5-10 minutes, until cheese is melted. 8. While the nachos are baking, prepare the toppings. 9. Slice the lime in half. In a small bowl, mix the sour cream with the juice and zest of one lime half. Add the cilantro. Mix well, and set aside. 10. In another small bowl, mash the avocado with the back of a fork. Squeeze in the juice from the other lime half. Dice the remaining red onion, and add to the guacamole. Add salt and pepper to taste. (If using the jalapeño – finely dice and add it here.) Mix well, and set aside. 11. Serve nachos topped with the guacamole and cilantro-lime sour cream. We recreated this recipe from @nestleprofessionalau the other night using a few products we have on our current Brochure. The Chef Black Garlic Paste is amazing, it takes this burger to a whole new level! Ingredients: For the Black Garlic Mayonnaise 🍔 10gm CHEF® Black Garlic Paste 🍔 50gm @birchandwaite Mayonnaise Whole Egg For the Burger 🍔 4 x @bakersmaison Brioche burger buns 🍔 4 x Burger patties 🍔 200gm dry cured bacon 🍔 200gm Bega Cheese Dairy Free Cheddar-Style Cheese For the garnish 🍔 75gm rucola salad 🍔 75gm pickled red onions 🍔 50gm ketchup 🍔 500gm @mrchipsnz Chips 10mm Extra Crunch Method: 1. Mix the mayonnaise and CHEF Black Garlic Paste together to create a smooth spread. 2. Fry the bacon crispy. Then grill the burger patties and the brioche buns. 3. Place the bacon on the patties and melt the cheddar over the patty. You can do this under a salamander or by using a gas-burner. 4. Assemble the burger by spreading some of CHEF Black Garlic Paste mayonnaise on the bun and build it up together with ketchup, salad, patties and pickled onions and finish with the bun. 5. Serve with French fries and using the remainder, an extra side potion of the CHEF Signature Black Garlic Paste mayonnaise. Try this Truffle Mushroom Risotto! 💕 Recipe from @sandhurstfinefoodsau incorporating Viander Ingredients 🍛 130g Sandhurst Carnaroli Rice 🍛 1 tbsp Viander Truffle Paste 🍛 2 Shallots 🍛 100ml white cooking wine 🍛 50g Sandhurst Dry Porcini Mushrooms 🍛 500ml Vegetable stock 🍛 200ml Dry Porcini soaking water 🍛 Sandhurst Extra Virgin Olive Oil 🍛 50g butter 🍛 25g Parmesan cheese to taste 🍛 Sandhurst Salt Flakes to taste 🍛 Pepper to taste Procedure 💕 This truffle flavoured, earthy mushroom risotto will definitely impress your guests -and it is so easy to make! 💕 Pro tip: Risotto gets its creaminess from its own the starch. Traditionally Italian risotto is made from short grained, starchy varieties, such as Carnaroli rice. A good risotto should be creamy, not runny, stiff or gluey. 💕 Place the dry porcini mushrooms in a bowl and cover with water. Let sit for 20 minutes, until rehydrated. Meantime, heat the vegetable stock. 💕 Drain the hydrated porcini mushrooms and mix 200ml of the soaking water with the vegetable stock. Bring to a boil. Sautee the chopped shallots with the olive oil and butter for about 2 minutes. Add the rice and sautee for 2-3 minutes. Add the wine and cook until the liquid is absorbed (about 1 minute). Season with salt and pepper. Next, add 2 large ladleful of warm stock (vegetable stock and the porcini mushroom soaking water). Let the broth come to simmer before stirring. Continue to stir gently so that the rice starts releasing its starch. Add the mushrooms and stir gently. If all liquid is absorbed, add more broth until the rice becomes creamy. Once the rice is cooked to al dente, add the truffle paste, butter, parmesan cheese and cover for 1 minute until the butter melts. Stir and serve. Oven – Place in a preheated 200C oven for approximately 5-7 minutes. Rest for 2 minutes prior to serving. Option 2. Deep Fry – From frozen at 180C for approximately 60-90 seconds. Rest for 2 minutes prior to serving. To make the Chocolate Sauce Ingredients: 200gm Nestle Plaistowe Premium Dark, chopped 200ml Nestle Reduced Fat Cream Method: 1. Place Nestle Plaistowe Premium Dark Chocolate and Nestle Reduced Fat Cream in a small saucepan. 2. Stir over low heat until chocolate melts and sauce becomes smooth. 3. To serve put the sauce either on the side or on top of your churros!
